So here's today's post. Something yummy...
Beans on Toast! My way :-)
Ingredients:
1 tin of beans (Haricot, broad, whatever type you like best)
A small onion
Mushrooms
courgette
Pepper
Thai Sweet Chili sauce
Vegetable stock roughly 75ml
Cherry Tomatoes chopped in half
Bread (you choose the type).
Right, cook your onions in a frying pan. After a minute or two add the mushrooms, peppers and courgettes. Cook for a couple more minutes. Then add the vegetable stock, tomatoes and beans. The stock should begin to bubble nicely. Put your bread in the toaster. Add the sweet chili sauce to the pan, stir and leave the sauce to reduce for a minute or two. Once almost all the stock has boiled away pour the vegetables onto your toast.
Eat. Yum!
